A very limited release of a single strain (hop) IPA. 2-row malt and a touch of caramel malt, but the dominant character is the citrus and fruit character from New Zealand Motueka hops. Think Mojito meets beer.

IPA

A 6.7% IPA with a grain bill featuring 2-Row, Vienna, Flaked Oats and Flaked Wheat and calcium chloride added to give the beer a smoother mouthfeel. No bitter hops were used, but we went with .5 pounds per barrel each of Citra, Azacca and Experimental Hop 09326 all at Whirlpool. It was dry hopped with 1 pound per barrel of Citra and .5 pounds per barrel of Azacca during active fermentation, then again with another 1 pound per barrel of Citra and .5 per barrel of Azacca at terminal gravity for a total of 4.5 pounds per barrel. The aroma is bursting out of the glass with citrus and melon – incredibly fruit forward. Lots of orange flavor with a really clean, smooth body. Has no lingering bitterness and drinks semi-sweet with a final gravity of 2.5 degrees plato and carbed to 2.6 volumes CO2.

Irish Stout

Dry Irish Stout  on NITRO

A classic example of this Irish-born, dark but creamy, roasty ale. Notes of chocolate and coffee-with-cream will linger in your mouth, but not for long as the roasted malts in the recipe help dry it out and leave pleasant flavors without any cloying sweetness. This beer is dark, but not at all strong at only 5.2% ABV. Now a 2017 San Diego International Beer Festival Gold Medal Winner!

The year’s almost finished, but we just couldn’t resist shoving one more IPA release down the chimney. And you thought we didn’t get you anything for the holidays? Here’s a Hazy Double IPA, packed with Citra, Mosaic, and Azacca. Brewed just for the holidays, this big, hazy, hoppy pint of holiday goodness will greet you with notes of grapefruit, lime, mango and pine, but just like frost in SoCal, it won’t hang around long. Unwrap this one first for maximum dankness.

Imperial Porter with Toasted Coconut 

Huge chocolate and dark fruit flavors from the base beer meld sublimely with toffee and caramel malt notes and the addition of toasted shredded coconut. Spicy but smooth alcohol notes bring it all together with a pleasant off-dry finish.

Brut-Tang

Brut IPA with Tangerine (Collab w/ Amplified Aleworks)

In celebration of their 6th anniversary, the good people from Amplified Aleworks asked us to do a collaboration beer with them. The result is this new style of IPA called Brut. We’re naming this one “Brut Tang” and using big aroma hops like Australian Galaxy and American Amarillo. These hops bring prominent citrus aromas and flavors with a touch of passion fruit. With enough never being enough, we amped up the citrus profile even more by adding copious amounts of tangerine to the final stages of fermentation. The result is a dry, champagne-like finish in an effervescent package. Hop bitterness is very low and any malt character is quickly overwhelmed by the result of enormous dry-hopping rates. This new style is quickly gaining in popularity and we can see why as we find it eminently pleasing to imbibe!

Belgian Table Beer

Also called the Trappist Single. It is a pale, light-bodied beer with fruity-spicy yeast character, spicy-floral hops and soft, rounded malt palate. A relatively new style by Belgian standards, it nonetheless refreshes with its drinkability while providing plenty of flavor from yeast esters and Czech Saaz hops. We added a little extra zest to our version of this beer with some black, red and green peppercorns and also some fresh coriander seed sourced from the San Diego Seed Co.

Hazy IPA *collaboration with Andy Davis*

An epically hazy beer from copious use of oats and wheat, but with just a hint of bitterness so as not to interfere with the amazing aroma and flavor. Four different dry hops meld together to create a hop bouquet with dreamy notes of tropical fruit, melon, grapefruit zest, gooseberry and stone fruit with secondary notes of pine, fresh peppers and black tea.

Bière De Garde *collaboration with Nick Corona*

A seldom-brewed style, the Bière de Garde literally means “Beer that has been stored.” Traditionally this beer is brewed in Spring, aged in cellars and consumed during warmer weather. Look for malty notes of caramel and biscuit, along with mild hints of Saison-like clove and pepper. A very dry finish will leave you ready for the next sip.
